Inglewood is set to welcome a new Marseille-inspired bistro

Inglewood local and hospo veteran David Pille, most recently general manager at Besk, snapped up the opportunity to found a brand-new bistro at 965 Beaufort Street – the spot previously known as the original Cecchi’s.

The new venture, Bistro Massillia, is set to open this Friday. The ‘Massilia’ in its name comes from the ancient port city now known as Marseille, France. The multicultural port city welcomes visitors from the Middle East, North Africa and Asia, shaping its culture and cuisine. Pille spoke on the inspiration for the concept, saying “It’s known as the city of 100 neighbourhoods, and I feel this is reflective of what Inglewood is.”

What was important to Pille was replicating the Euro-centric bistro experience, with a relaxed dining style and a menu built to share. There are a range of spaces to settle into, from a relaxed front bar to the courtyard featuring an olive tree and a grapevine locals know well. “My dad grew up in a small village in the North of France, and there was this one bistro which was the gathering place for the community,” said Pille.

“What makes a bistro different for me is that it’s really approachable, where we will have something for everyone. It’s also a more personable space, we want to get to know the locals and not just treat them like a number.”

Cross-cultural influence can be seen throughout the menu, where French technique is met with Mediterranean flavours, all put together with WA’s seasonal produce. Chef Matt Mills will take on his first head chef role since arriving in Perth, bringing with him his experience from working in 5-star hotels and Michelin Star restaurants across the UK.

Signature dishes include the swordfish cotoletta with bouillabaisse, poached mussels and chervil butter, where classic European style meets local seafood, and the Coquillettes Jambon, a French take on mac and cheese that Pille grew up with.

The drinks program has been curated by some of the best in the business, with the wine list representing the best of WA alongside old-world European classics thanks to sommelier Trent Everitt. The cocktail menu is the brainchild of Shirley Yeung, taking cues from European aperitif culture and leaning into citrus, florals and subtle savoury notes. We’re waiting to try the signature Massilia Spritz – orange liqueur, quince vermouth and prosecco. If you’re after something a bit more casual, tap beers include offerings from FOUND. Subiaco and Margaret River Beer Co.

Bistro Massilia, opening Friday, April 24, is set to become a familiar fixture in Inglewood, both for regular visits, special nights out, or casual meals with friends any time of the week.
